BON MELANGE FRENCH MARKET SOUP 
1 pkg. assorted dry beans
3 qts. water
1 tbsp. salt
Ham bone
Pepper to taste
Parsley to taste
Basil to taste
1 lg. can tomatoes
2 c. chopped onion
2 c. chopped celery
2 cloves garlic, minced
1 lb. sliced smoked sausage
2 raw boneless chicken breast, cut into bite size pieces
Cooked rice

Wash and drain beans. Add water, salt, ham bone, pepper, parsley and basil. Simmer covered 2 1/2 to 3 hours. Then add tomatoes, onion, celery, garlic. Simmer uncovered 1 1/2 hours, until creamy. Add smoked sausage and chicken breast. Simmer 40 minutes. Serve with scoop of rice and chopped parsley. Flavor improves with age; best when made day before.
