SWEET AND SOUR CHICKEN WITH
APPLES
 
1 (3 lb.) chicken, cut up
2 tbsp. oil
1 tsp. salt
1/2 tsp. pepper
2 tbsp. sesame seeds
1 1/2 c. chicken broth
1/3 c. sugar
1 tbsp. soy sauce
1/4 c. vinegar
2 tbsp. cornstarch (mix with 2 tbsp. water)
3 apples, pared, cut in fourths
1 med. green pepper in fourths

Rub chicken with oil. Lay flat in baking dish, skin side up. Sprinkle with salt, pepper and sesame seeds. Bake at 400 degrees for 20 minutes.

Combine broth, sugar, soy sauce and vinegar. Bring to boil. Stir in cornstarch. Cook until thickened.

Arrange apples in between chicken. Top with green pepper. Pour sauce over chicken and apples. Reduce heat to 350 degrees. Bake 25-30 minutes until apples are tender. Baste frequently with sauce. Serve with rice. Serves 4.
