CHICKEN IN APPLE MUSTARD SAUCE | |
4 chicken breasts, halved, boned & skinned 2 tbsp. butter 1 c. apple juice 1 med. onion, sliced thin 1 clove garlic, minced 1/2 tsp. thyme 4 tsp. Dijon mustard 1 apple, cored & sliced (green & tart) 1. Flatten chicken breasts with the dull side of a heavy knife. 2. Melt butter in a large skillet. 3. Add chicken breasts and brown. 4. Add apple juice, onion, garlic and thyme. 5. Cover and cook 10-12 minutes or until chicken is tender. 6. Remove chicken and keep warm. 7. Bring liquid to a boil. 8. Add mustard to skillet. Stir until well blended. 9. Add apple slices. 10. Pour sauce over chicken. |
