CHICKEN WITH APPLE MUSTARD SAUCE 
4 chicken breast halves, boned & skinned
2 tbsp. butter
1 c. apple juice
1 med. onion, sliced
1 clove garlic, minced
1/2 tsp. thyme
4 tsp. Dijon mustard
1 apple, cored & sliced

(May substitute onion and garlic powder sprinkle on small amount.)

Flatten chicken breasts with the dull side of a heavy knife. Melt butter in a large skillet. Add chicken breasts and brown. Add apple juice, onion, garlic and thyme. Cover and cook 10-12 minutes or until chicken is tender. Remove chicken - keep warm. Bring liquid to boil and add mustard. Stir until thickened and well blended. Add apple slices. Pour sauce over chicken. Makes 4 servings and can easily be doubled.
