ITALIAN HAMBURGER CASSEROLE | |
2 lbs. hamburger 1/2 c. minced onion 2 (6 oz.) cans tomato paste 2 (6 oz.) cans tomato sauce 2 tsp. dried basil 2 tsp. dried parsley flakes 2 tsp. granulated sugar 1 tsp. oregano Dash garlic salt 1/4 tsp. pepper 2 (3 oz.) cans mushroom slices, drained 2 boxes Stouffers frozen spinach souffle 1 lb. cottage cheese 1 (8 oz.) pkg. Mozzarella cheese You need to thaw the spinach souffle before you use it. A microwave works great to do this is 3 minutes if you have one. About 1 hour before dinner: In large skillet, saute hamburger and onion until meat loses its pink color, and onion becomes transparent. Add tomato paste, tomato sauce, basil, parsley, 1 teaspoon salt, sugar, oregano, garlic salt and pepper. Set aside 15 canned mushrooms slices; add rest of slices to meat mixture. Simmer over low heat, uncovered, 10 minutes, stirring often, or until thickened; then, with cooking spoon, mark off this meat mixture into 5 equal portions. Then take the thawed spinach souffle and mix it with the cottage cheese. Divide this into 5 portions and set aside. With sharp knife, slice twelve 2 1/2 by 1/2 by 1/2 inch strips from Mozzarella cheese, dice rest of cheese. Start heating oven to 375 degrees. In 13 x 9 x 2 inch baking dish, arrange alternately, in lengthwise strips, 2 portions of meat mixture and 3 portions of spinach. Sprinkle on the diced mozzarella cheese. Then on top of the diced cheese, arrange alternately in lengthwise strips, 3 portions of meat mixtures and 2 portions of spinach. Now, with the mozzarella cheese strips, make 4 cross rows on top of the meat mixture, placing end to end for each row. Garnish with reserved mushroom slices. Bake 25 to 30 minutes or until bubbling hot. Serve at once. Makes 10 servings. If you want to halve this recipe, bake in 12 x 8 x 2 inch dish at 375 degrees for 15 to 20 minutes. This is a great make the night before dish if you are having a party on a work night or just want to avoid fussing in the kitchen while your guests are there. Make it the night before, cook it for about 20 minutes, then the night of your party, pop it in the oven at 375 degrees for about 20 minutes and it is great! |
