CALIFORNIA TAMALE PIE 
1 lb. ground sirloin
1 lg. onion
1 bunch scallions
1 pkg. Lawry's taco seasoning mix
1 env. Lipton onion soup
1 (12 oz.) can whole kernel corn
Salt to taste
Garlic to taste
4 oz. grated Cheddar cheese
1 c. yellow cornmeal
6 c. boiling water
2 tbsp. fat

The tamale pie will consist of a meat mixture, covered with a cornbread topping. Saute ground sirloin, onions, scallions, salt, and garlic until meat is completely done. Drain fat; add taco mix and onion soup. Mix well. Add whole kernels of corn. Set aside. Cook cornmeal, water, and salt until mixture forms a paste like consistency. Add fat when mixture is taken off the fire. In a casserole dish, make a layer of meat mixture, a layer of grated cheese, alternating until at least 3 layers of each have been made. Cover the casserole layers with the prepared cornbread topping. Bake casserole in oven (350 degrees) until cornbread topping is golden brown.

I add a can of Ranch Style Beans with the meat and corn mixture. Then I top with sour cream and guacamole to serve.
