SUMMER APPLE PIE 
1 egg
3/4 c. sugar
1/2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 1/2 c. chopped apples
3/4 c. chopped nuts

Beat egg, add sugar. Combine flour, baking powder and cinnamon; sift into egg mixture. Mix well. Stir in apples and nuts. Spoon into an 8 or 9 inch pie pan, well greased - smooth top. Bake at 350 degrees about 45 minutes or until center springs back and is lightly browned. Serve warm with Cool Whip or ice cream. I sprinkle a little sugar on top before baking to make it more crisp. Serves 6.
