BROCCOLI-RICE CASSEROLE 
1 1/2 c. boiling water
1/2 stick butter, softened
2 tbsp. chopped onion
10 oz. broccoli, chopped
1 sm. jar Cheese Whiz
1/2 tsp. salt
1 1/2 c. Minute Rice, uncooked
1 can cream of mushroom soup

Bring water to boiling. Add butter and chopped onions. Cook for a few minutes-until butter is melted; add broccoli and salt (if broccoli is frozen-separate it). Remove from heat. Add soup and Cheese Whiz. Pour into casserole dish.

Sprinkle with bread crumbs on top or cracker crumbs. Bake at 350 degrees for 30 minutes until all melted. Cool and serve.

Serves 6.
