ACINI DE PEPE SALAD 
1 lb. Acini-DePePe

Boil in salted water 5-7 minutes. Cool and blanch.

DRESSING:

1 c. sugar
1/2 tsp. salt
3 egg yolks, beaten
2 tbsp. flour
1 3/4 c. pineapple juice

Cook until thick. Add to drained Acini-DePePe and let stand overnight or a few hours. Then add: (drain fruit reserving pineapple juice for the dressing)

2 (14 oz.) cans chunk pineapple, cut up if you like
2 (11 oz.) cans mandarin oranges
1 pkg. miniature marshmallows
1 lg. container Cool Whip (12-16 oz.)

Let stand at least an hour before serving. Add bananas just before serving. Grapes and other fruit may be added. If it seems too dry, add a little cream.

NOTE: This is a very large recipe. It is especially good for anniversary, etc. celebrations plus the Acini-DePePe has good nutrients.
