REFRESHING SUMMER SALAD 
1 c. diced cucumber
1 tbsp. green onion
1/4 c. celery, chopped
1/4 c. green pepper, chopped
1/4 c. carrots, shredded
2 (3 oz.) pkgs. lime Jello
1 1/2 c. water, boiling
1/2 c. evaporated milk
3/4 c. cold water
1 (12 oz.) container cottage cheese

Prepare vegetables and set aside. Dissolve one package lime Jello in 1/2 cup boiling water. Stir in 1/2 cup evaporated milk. Add cottage cheese. Stir in vegetables and pour into 9" mold or 7"x11" dish. Refrigerate until almost set.

Dissolve one package lime Jello in 1 cup hot water. Add 3/4 cup cold water. Pour over top of first mixture, refrigerate until set.
