SUMMER FRUIT SALAD 
1 fresh pineapple, peeled, cored & cube
1 qt. fresh, hulled strawberries
1/2 c. fresh or frozen blueberries, thawed
1/2 c. fresh or frozen raspberries, thawed
1 (11 oz.) can mandarin oranges, drained
2 c. orange juice
1/2 c. sugar
1/4 c. cream sherry
1/2 tsp. almond extract
1/2 tsp. vanilla extract

Combine first 5 ingredients in a large bowl. Combine remaining ingredients, stirring until sugar dissolves. Pour sherry mixture over fruit mixtures, tossing liquid. Cover and chill 2-3 hours. Serve salad mixture with slotted spoon. Serves 10 people.
