SUMMER FRUIT SALAD 
1 pkg. instant vanilla pudding (low calorie)
2 c. pineapple juice
2 tbsp. Tang

MAIN INGREDIENTS:

2 (16 oz.) mandarin oranges
3 lg. bananas
2 kiwi, optional
1 qt. strawberries
1 (20 1/2 oz.) can pineapple chunks

Blend sauce ingredients. Set aside. Drain canned fruit. Wash, hull and thickly slice strawberries.

In a large bowl add strawberries to sliced bananas. Add drained canned fruit. Add peeled, sliced and quartered kiwi. Pour sauce over fruits and toss lightly with wooden spoon or rubber spatula. Place in a serving bowl and garnish with lettuce. Serves 8-12.
