CARAMEL BREAD PUDDING 
2 c. chopped apples
1 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. butter
1/4 c. apple juice
1/3 c. raisins
1 tsp. vanilla extract
1 (12 oz.) can evaporated milk
3 eggs
1/2 c. packed brown sugar
4 c. bread crumbs
1/2 c. walnuts
1 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. sugar

Combine the apples, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg and butter in a saucepan. Cook over medium heat for 5 minutes, stirring frequently. Add the apple juice, raisins, vanilla, evaporated milk, eggs, brown sugar and bread cubes, mixing well. Pour into an 8-inch square baking dish. Process the walnuts with the remaining 1 teaspoon cinnamon, 1/4 teaspoon nutmeg and sugar in a blender. Sprinkle over the pudding.

Bake at 350°F for 30 minutes.

Yields 8 servings.
