SHRIMP FRIED RICE 
In a small saucepan bring 1 1/2 cups water to a boil. Stir in 1 1/2 cups instant rice. Remove from heat. Cover and let stand 5 minutes. Using 10-inch skillet, cook 1 egg slightly beaten in 3 tablespoons butter. Add 1/2 cup chopped onion and rice.

Saute over medium heat until mixture is lightly brown. Mix 1/4 cup water with 2-3 tablespoons soy sauce and stir into rice. Add 1 package small frozen shrimp (thawed). Simmer until shrimp is heated. Serve hot. Serves 4. Recipe may be doubled.
