SPANAKOPITA (SPINACH PIE) | |
2 c. crumbled feta cheese 2 tbsp. flour 1 c. chopped onion 2 c. (1 lb.) small curd cottage cheese 5 eggs 3 tbsp. butter 1 lb. package filo dough 1 tsp. basil 1/2 tsp. oregano 2 lbs. fresh spinach Salt and pepper to taste 1/2 lb. butter Preheat oven to 375 degrees, cut, destem and chop spinach. Cook without water for 5 minutes. (Steam it slightly, you don't want it to wet or wilted). Melt 3 tablespoons of butter and saute onions until wilted. Combine all ingredients in a large bowl. Spread some melted butter to coat the bottom and sides of a 13 x 9 pan. Keep dough moist by covering with a damp towel. Layer a sheet of filo dough in the pan. Spread melted butter over it, then place another sheet of filo dough on that, continue layering filo dough and melted butter for 8 layers. Spread 1/2 of the spinach mixture on the filo layers. Cover the spinach mixture with 8 more layers of filo dough, buttering each layer. (DO NOT skimp on butter). Add the rest of the spinach mixture. continue layering the filo dough and melted butter until all the dough is used. Fold excess dough down around edges making tidy little corners. Butter the top most sheet of filo dough generously. Bake for 45 minutes or until golden brown. |
