BEST COUNTRY MASHED POTATOES
8 large potatoes, peeled
half large pot of water
1 (8 oz.) pkg. cream cheese, softened
salt and pepper, to taste
1/2 cup (1 stick) butter
1 tbsp. milk (if thick add a 'lil bit more, be careful)

Boil half big size pot of water. Add potatoes. Cook on medium heat for about an hour. Drain pot when a butter knife can easily go through the potatoes. Do not let them get to where all is breaking off, they will be too soggy.

Take beater or masher and smash up potatoes with 8 oz. of cream cheese. Then mix in the butter with a spatula. Season with salt and pepper. Add milk, pour carefully, not too much. Then serve. If you'd like serve with gravy over them.
