BROCCOLI CORNBREAD 
1 box Jiffy cornbread mix
3 eggs
1 cup cottage cheese
1/2 cup (1 stick) butter
1 small onion, chopped
1 (10 oz.) box frozen chopped broccoli, thawed
2 cups shredded cheddar cheese
salt and pepper, to taste

Mix all together and bake at 350°F until brown. My family likes it better when I cook it to a dark brown. It makes the sides crunchy.
