CHEESE SOUFFLE | |
3 tbsp. butter 2 tbsp. flour 1/2 c. grated cheese 1 c. milk 3 egg yolks, beaten 1/4 tsp. celery salt Pinch of pepper 3 egg whites, beaten stiff Preheat oven to 350 degrees. Melt the butter, stir in the flour and slowly add the milk. Cook and stir the sauce with a wire whisk until smooth and boiling. Add the cheese and stir until melted. Add 3 beaten egg yolks by pouring a small amount of hot mixture into eggs, stirring constantly, this prevents curdling. Pour yolk mixture in cheese sauce. Add salt and pepper. Fold in stiff egg whites. Pour into lightly greased 7 inch casserole. Bake 30 minutes without opening the oven door. SERVE AT ONCE!! |
