EGG PUFF 
10 lg. eggs
1/2 c. whole wheat pastry flour
1/2 tsp. baking powder
1 pt. sm. curd cottage cheese
1 lb. Monterey Jack or mild cheddar cheese, grated
1/4 tsp. salt
1 (7 oz.) can diced green chilies

Beat eggs in a large mixing bowl. Add flour and baking powder and mix well. Mix in remaining ingredients and pour into a 9 x 13 inch pan. Bake at 350 degrees for 35 minutes or until set. Serve with salsa or guacamole. Serves 6 to 8.
