This is a good make-ahead salad for parties and dinners. It is also a good one to make when you haven't fresh material on hand to make a green salad. This serves at least 12. 1/4 lb. marshmallows (about 16) 1 c. milk 1 sm. pkg. lime Jello 2 (3 oz.) pkgs. cream cheese 1 (1 lb.) can undrained crushed pineapple 1 c. whipping cream, whipped or 1 pkg. whipped topping mix 2/3 c. mayonnaise 1/3 c. chopped walnuts Melt the marshmallows in the milk over hot water in double boiler. Pour hot mixture over the Jello. Stir until dissolves and then stir in the cheese, stirring until it dissolves. (Sometimes I put it all back in the double boiler over the hot water for a bit if it is slow in dissolving!) Next, add the crushed pineapple and cool mixture. Last, blend in the mayonnaise and whipped cream and pour into a pretty bowl. This makes a nice, firm salad, so it could probably even be poured into a flat pan and cut into squares to serve on a lettuce leaf. A friend of mine varied this recipe by using canned fruit cocktail to replace the pineapple and whipped chilled evaporated milk to substitute for the whipping cream. I thought it was delicious, too. |
