TUNA RICE CAKES 
1 c. cooked rice
1 can tuna, drained
1/2 c. grated cheese
3 tbsp. bread crumbs
1 tbsp. minced onion
1/8 tsp. pepper
1 egg, beaten
2 tbsp. butter

Stir together rice, tuna, cheese, 2 tablespoons bread crumbs, onion, pepper and egg until well blended. Shape mixture firmly into 4 patties. Coat with remaining crumbs. In a skillet, melt butter over medium heat. Add patties and cook until browned on both sides.
