GERMAN RAVIOLI 
NOODLE DOUGH:

2 1/2 c. flour
3 or 4 eggs
2 tbsp. water

Make well in flour, add eggs and water. Mix and knead until dough is smooth and silky. Cover with bowl; let rest.

FILLING:

1/2 - 3/4 lb. hamburger
1 sm. onion, chopped
Dash salt, pepper & seasoning salt
1 sm. can spinach, drained
1 egg
1/2 c. bread or cracker crumbs

Mix everything together. May add green onion tops, parsley, leftover smoked ham, chopped. Roll out dough, very thin, cut into 3"x6" pieces. Put tablespoon of filling on one end of dough center. Apply egg white to edge of dough. Fold over and press edges together with fork. Put in boiling water. Simmer 5 to 8 minutes. Serve in beef bouillon broth.

My mother in law showed me how to make this dish. She did not add spinach. Instead of serving them with broth she boiled them and then browned them in a frying pan with butter. Served with salad on the side. I have to make a lot for us. Since it is time consuming I make them about twice a year. Depending on where you live in Germany this recipe changes. Try them browned and serving. Great taste.
