RECIPE COLLECTION
“DUMPLINGS” IS IN:

DUMPLINGS 
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
Milk

Sift flour, baking powder and salt together. Add beaten egg to a little milk and mix with flour, adding enough milk to make a drop batter. Drop by tablespoon into boiling stew. Cover and cook without lifting cover for twenty minutes.

Dumplings (for Stewed Chicken):

2 cups flour
1 teaspoon salt
4 teaspoons baking powder
2 teaspoons butter
3/4 cup milk

Combine ingredients. Place the dough by spoonfuls on the top of a boiling stew. Cover and boil twelve minutes without removing the cover.

I prepared the top recipe and this was my first time making dumplings.. I did learn I will need more chicken stock next time because the dumplings sucked it all up. I improvised still great and easy.. My b/f along with our 4 kids loved it! Thanks!

My mom Emma taught me as a young girl to make dumplings using only two eggs, little milk and flower mxed and dropped into boiling chicken broth. Comfort food at it's best. So glad she taught me the trade. Love you mommy. XO

This is the same basic recipe my mother used for all of my childhood as dumplings - drop or rolled (rolled using 1/2 cup extra flour). She cooked them in stews uncovered for fifteen minutes then covered for fifteen minutes.

This recipe is excellent for either beef or chicken stews or even vegetable stew. For chicken I spice the dough with sage and tarragon or cumin - for beef I spice the dough with thyme and sage. For vegetable stew I use any combination I am in the mood to use depending on the season of the year.

Another great one is to add cheese to the dumplings and cook them in either tomato soup or spaghetti sauce. Absolutely delicious!!

Needed something quick. Had 5 frozen ckn breast. Used 4 cups Organic ckn stock, some garlic powder (out of fresh). Pressure cooked for 12 minutes. Took ckn out, cut it up, put it back in, and added the dropped tons of dumplings in. Looked like a mess, but it turned out FABULOUS! Rave reviews from a hungry group! It's been years since I made it, thanks for the refresher recipe!
