OVEN CANDIED SWEET POTATOES 
4 med. sweet potatoes
1/3 c. packed brown sugar
1/4 c. butter
1/2 tsp. salt
3/4 c. tiny marshmallows

Preheat oven to 375 degrees. Prepare and cook whole sweet potatoes in water just until tender. Drain, peel and cut into 1/2" thick slices. In a 1 1/2 quart casserole layer half each of the potatoes, brown sugar, butter and salt. Repeat layers. Bake, uncovered in a 375 degree oven for 30 to 40 minutes or until glazed. Sprinkle marshmallows over top. Bake about 5 minutes longer or until lightly browned. Serves 6.
