APRICOT SALAD 
1 (6 oz.) pkg. apricot flavored gelatin
2/3 c. boiling water
1 (8 oz.) cream cheese, softened
1 (15 1/2 oz.) can crushed pineapple, undrained
2 (7 3/4 oz.) jars apricot baby food
1 (8 oz.) carton Cool Whip, thawed
Lettuce (opt.)
Fresh or canned apricot slices (opt.)

Dissolve gelatin in boiling water. Cool slightly and set aside. Beat cream cheese until smooth. Gradually add gelatin, beating well. Stir in pineapple and baby food, fold in Cool Whip. Pour mixture into 12"x8"x2" dish, cover and chill until firm. To serve, cut into squares and place on lettuce. Garnish with apricot slices. Yield: 12 servings.
