CHEESY POTATOES 
32 oz. hash brown frozen potatoes, thawed
1 can cream of chicken or cream of mushroom soup
1 pt. sour cream
1 stick butter, melted
2 c. cubed Velveeta cheese
1 med. onion, minced

Preheat oven to 325 degrees.

Mix ingredients and place in baking dish. Cover with crushed Ritz crackers. Dot with butter. Bake for 45-60 minutes. Serves 8-10.
