MEXICAN ENCHILADAS 
1 dozen flour tortillas
1/2 lg. onion, chopped
1/2 lb. cheddar cheese, grated
2 (15 oz.) cans chili without beans

Heat oven to 350 degrees. Mix onions, cheese and chili together. Then butter both sides of each tortilla. In center of each tortilla put on equal amount of chili mixture and then roll up and put into baking dish (11 1/2" x 7 1/2" x 1 1/2"). Spoon the rest of the chili mixture over the top of the enchiladas. Bake, uncovered 15 minutes or until cheese is melted.
