MEXICAN ENCHILADAS 
1 lb. hamburger
1/2 lb. shredded Colby cheese
1 onion
1 jar of Enchilada sauce
1 can tortilla

Brown hamburger. Add cheese and onion. Cook until cheese is melted. Fry 1 can torillas in grease; each one for about 1 minute. Heat enchilada sauce and dip fried tortillas in it. By spoonfulls, put hamburger in center of tortillas. Fold tortilla over hamburger mixture. Hold with a toothpick. Bake at 325 degrees for 15 to 20 minutes.
