BETTY'S SUMMER SOUP | |
2 cucumbers, skinned, seeded & chopped in 1" pieces 1 can cream of celery soup 1 can consomme 1/2 c. milk 1/2 pt. sour cream Salt, pepper, rosemary or dill Boil cucumbers in water for a few minutes saving a few chopped pieces for garnish. Add both soups (the celery diluted with the milk) to the cucumbers and water; mix thoroughly. Add 1/2 pint sour cream. Again mix thoroughly. Add seasoning to taste. Let chill in refrigerator for at least 2 hours. Serve with chopped cucumber pieces on top. Serves 6. |
