STIR-FRIED CHICKEN & VEGETABLES 
3 tsp. vegetable oil
1 (10 oz.) pkg. frozen Chinese style vegetables with seasoning
2 chicken breasts, cut into 1/4" slices
1/4 c. water
Soy sauce

Heat 2 teaspoons of the oil in heavy skillet. Remove and reserve seasoning package from vegetables. Add frozen vegetables to hot oil and stir to break up pieces. Cover and let cook 2 minutes. Remove to a small bowl; keep warm. Heat remaining teaspoon of oil in skillet. Add chicken, cook, stirring constantly with wooden spoon 5 minutes. There should be no pink left in chicken. Return vegetables to skillet; sprinkle seasoning over and stir in water until sauce thickens, about 1 minute. Season to taste with soy sauce and serve with hot cooked rice.
