SUMMER SAUSAGE 
5 lb. hamburger, not too lean
5 rounded tsp. Morton Tenderquick salt
2 tsp. mustard seed
2 1/2 tsp. garlic salt
2 1/2 tsp. coarsely ground pepper
1 tsp. smoked salt

Mix together. Cover and refrigerate overnight. Take out once a day for 3 days. On 4th day form into rolls. Put on broiler rack and pan. Bake at 175 degrees for 8 hours. Refrigerate or freeze.
