CORN MUFFINS 
2 1/4 c. cornmeal mix
1 egg
1 tbsp. sugar (optional)
2/3 c. water

Put mix and sugar in bowl. Beat egg and water with fork until blended. Add to dry ingredients and mix only until moistened. Fill 8 greased muffin pans 2/3 full with corn mixture. Bake in hot oven (425 degrees) about 20 minutes. Makes 8.
