CORN BREAD MUFFINS 
1 1/2 c. self-rising cornmeal
1/2 c. self-rising flour
1 tbsp. sugar
Buttermilk
1 egg
5 tbsp. cooking oil

Mix cornmeal, flour and sugar. Add enough buttermilk for moderate consistency. Add egg and cooking oil and mix well. Spoon into well-greased muffin pan and bake 20 minutes in preheated oven at 400 degrees. Makes approximately 12 muffins.
