POTATO PANCAKES 
4 lg. potatoes
3 eggs
1 1/2 tsp. salt (to taste)
2 tsp. baking powder
2/3 c. flour (all-purpose)
1 lg. onion, minced
Oil for frying (Mazola or other light oil)

1. Peel and grate the potatoes coarsely. Drain the fluid from the potatoes. Put them in a bowl, add eggs, beat 1 minute; add flour, pepper, salt and baking powder. Mix well.

2. Heat 1 1/2 inches oil in frying pan over medium heat. Drop a heaping tablespoon of the mixture in the pan and press gently with a spatula. Fry until bottom is crisp and golden brown. Then turn. Makes about 1 1/2 dozen pancakes.
