ZUCCHINI CASSEROLE 
4 c. zucchini
1 c. mayonnaise
1 c. Parmesan cheese
1 med. onion
1 pepper, mild or hot, chopped
2 eggs

Boil zucchini, onion and pepper just tender. Drain and put aside. In a bowl beat the eggs and add the remaining ingredients. Mix all together and pour in a well greased casserole. Top with cracker crumbs sauteed in butter. Bake 35-45 minutes at 350 degrees.
