ZUCCHINI SQUASH CASSEROLE 
1 med. zucchini squash
2 beaten eggs
1 c. mayonnaise
1 c. Parmesan cheese, grated
1 tsp. dill seed
1 sm. diced onion
1/4 c. diced green pepper
1 c. buttered crumbs

I boil the onion and pepper in small amount of water for a couple of minutes. It takes away that raw taste.

Cook squash in water with salt and pepper. After you have peeled and diced it, drain. Add eggs, mayonnaise, cheese, onion and pepper and dill seed. Mix all together, cover, and refrigerate overnight. Cover with some buttered crumbs. Bake at 350 degrees for 30 minutes or until set.
