ZUCCHINI SQUASH CASSEROLE 
2 c. cooked and drained zucchini
1 c. cooked and drained carrots

Mash above ingredients with potato masher.

1 lg. onion, chopped
1 stick butter
1 pkg. Stove Top cornbread dressing (melt butter and put dressing in it), reserve one cup for top
1 lb. grated cheese
1 c. sour cream

Place half of dressing in bottom of casserole, add above ingredients. Add remainder of dressing and top with cheese. Bake until cheese is melted and brown.
