ZUCCHINI CASSEROLE 
4 c. zucchini (sliced)
2 c. boiling water
2 eggs
1 c. mayonnaise
1 onion, chopped
1/4 c. green pepper, chopped
1 c. grated Parmesan cheese
Salt and pepper to taste
1 tsp. butter

Cook zucchini in boiling water until tender and drain. Beat eggs in large bowl. Stir in remaining ingredients and add zucchini. Pour into greased 1 1/2 quart baking dish. Bake at 350 degrees for 30 minutes or until bubbly.
