STUFFED ZUCCHINI BOATS 
6 zucchini
1/2 c. chopped onion
2 tbsp. butter
1 c. tomatoes
1 tsp. salt
1/4 tsp. poultry seasoning
Dash pepper
1 1/2 c. cheddar (6 oz.)
4 slices bacon, crumbled

Trim ends, boil in salted water 5 to 8 minutes. Cut lengthwise, scoop out and chop up. Combine the chopped zucchini with seasonings. Saute onions. Mix all together. Fill shells and bake at 30 minutes at 350 degrees.
