STUFFED ZUCCHINI 
1 lg. zucchini
16 oz. tomato sauce
8 oz. pkg. shredded Mozzarella
1 lb. ground meat
1/2 chopped onion
1/2 c. bread crumbs
Spices (garlic, oregano, parsley), to taste

Cut zucchini in half lengthwise. Scrape inside out and cube. In skillet, brown meat lightly, drain grease and add the cubed zucchini, bread crumbs, onion, spices, tomato sauce, cheese and heat. Microwave zucchini halves for 2 minutes. Put in a 9 x 13 inch pan. Add stuffing and bake uncovered for 45 minutes at 350 degrees. Serves 6-8.
