STUFFED ZUCCHINI | |
2 lbs. zucchini 1/4 c. mayonnaise 2 tsp. dried parsley 1 tsp. salt 2/3 c. chunky style spaghetti sauce 1/2 lb. ground beef, cooked 2 tsp. onion flakes 1 tsp. oregano 1/4 tsp. pepper Halve zucchini. Scoop out center, leaving 1/4 inch shell to make "boats". Place "boats" in shallow baking dish. Coarsely chop zucchini center, mix with remaining ingredients EXCEPT spaghetti sauce. Spoon mixture into "boats" and pour spaghetti sauce over the top. Add about 1/4 inch of water to the baking dish around the stuffed zucchini. Bake at 350 degrees for about 30 minutes. You may add grated Mozzarella cheese to the top of the zucchini for the last 5 minutes of baking time. Yield: 4 to 6 servings. |
