SAUSAGE STUFFED ZUCCHINI 
1 1/2 lbs. zucchini
1/2 c. water
1/2 lb. pork sausage
1/4 c. onions, chopped
1 slightly beaten egg
1/2 c. crushed saltines
1/2 c. Mozzarella cheese
Salt
Garlic salt
Pepper
Paprika

Cut zucchini lengthwise. Scoop out pulp; set aside, leaving 1/4" shell. Chop pulp up for 1 cup. Add to sausage mix. Cook sausage and onions; drain. Cook zucchini in water, shells turns upside down. Add remaining ingredients except paprika to sausage and onions. Stuff zucchini with sausage mix. Bake at 350 degrees for 25 minutes. Sprinkle with paprika.
