BAKED CROQUETTES (NOT DEEP FRIED) | |
1/4 c. butter 1/4 c. flour 1 c. milk 1 sm. onion, grated 1 1/2 c. ground cooked meat, fish, chicken, etc. 1 c. mashed potatoes Salt & pepper 1/4 c. undiluted evaporated milk About 3/4 c. fine dry bread crumbs 2 tbsp. melted fat Melt butter; blend in flour and onion, add milk gradually. Cook until very thick. Add meat and potatoes, season to taste. Chill. Shape into 4 croquettes and chill. Dip in evaporated milk, then in crumbs. Repeat once; let stand 1/2 hour. Put on greased baking pan, sprinkle with melted fat. Bake in 425 degree oven about 20 minutes until brown. Serve with a creamy sauce. |
