PINEAPPLE UPSIDE DOWN CAKE | |
Melt butter the size of a walnut in a skillet, grease the sides also. Put 1 cup brown sugar in this and place slices of pineapple on top of sugar. Then mix: 1 c. white sugar 1 c. flour 1 tsp. baking powder Beat 2 egg yolks and add the pineapple juice, then add the flour mixture. Add 1 teaspoon vanilla. Fold in 2 stiffly beaten egg whites. Pour on top of pineapple and bake at 350 degrees until toothpick comes out clean. Turn upside down on platter. |
