CHICKEN SALAD 
5 c. cooked chicken, cubed
2 tbsp. salad oil
2 tbsp. orange juice
2 tbsp. vinegar
1 tsp. salt
1 1/2 c. sm. seedless grapes
1 1/2 c. diced celery
1 (13 1/2 oz.) can pineapple tidbits, drained
1 (11 oz.) can mandarin oranges, drained
1 c. toasted slivered almonds
1 1/2 c. mayonnaise

Combine chicken, salad oil, orange juice, vinegar, and salt. Let stand while preparing other salad ingredients. (These could be prepared and refrigerated overnight.) Toss gently the salad mix and mayonnaise into chicken mixture.

I sometimes use 4 or 5 cans of Swanson's chunk white chicken in water for the chicken.
