DADDY'S PINEAPPLE FRENCH TOAST 
1 med. to large size pineapple, chopped
6 eggs
2 tbsp. fructose
6 slices of whole wheat or French bread

Blend together in a blender, pineapple chunks, eggs and fructose. Dip bread in egg/pineapple mixture. Place on greased pan, already hot. Can be pancake griddle or some kind of flat pan. Flip when side down is brown. Cook other side. Top with warm maple syrup and enjoy. See maple syrup recipe.
