BUTTERSCOTCH COOKIES 
1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs, beaten
2 c. flour
1/8 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. rolled oats
1 c. coconut
1 c. nuts (or less)
2 tsp. vanilla

Cream shortening and sugars until light. Stir in dry ingredients. Chill dough overnight. Make into small balls and bake as you need them. Bake at 375 degrees for 10 minutes.
