PLUM OATMEAL BREAD | |
1 c. chopped, pitted plums (5 or 6 Italian prune plums or 3 lg. plums) 2 c. sifted flour 3 tsp. baking powder 1/2 tsp. baking soda 3/4 c. sugar 1 c. quick cooking rolled oats 2 eggs, beaten 1 c. nuts, chopped, optional 1/4 c. vegetable oil 1 c. milk Prepare plums and set aside. Sift or stir flour, baking powder, soda and sugar into bowl. Stir in oats. Combine eggs, oil and milk. Add to dry ingredients, stirring just enough to moisten. Stir in plums and nuts. Pour into greased 9x5x3 inch loaf pan or 3 mini pans. Bake at 350 degrees for 1 hour, little less for mini pans. Cool in pan for 10 minutes. Remove to cooling rack. Stores and freezes well. Slices best on second day. |
