HERB BUTTER ZUCCHINI FANS 
1/3 c. butter, softened
2 tbsp. minced fresh parsley
1/2 tsp. dried whole tarragon
1/8 tsp. salt
1/8 tsp. pepper
4 sm. zucchini
1/4 c. water
2 tbsp. freshly grated Parmesan cheese
1 tbsp. soft bread crumbs

Combine first 5 ingredients and set aside.

Cut each zucchini into lengthwise slices, leaving slices attached on stem end. Fan slices out, and spread evenly with butter mixture. Place in a 15x10x1 inch jelly roll pan; add water. Bake at 400 degrees for 20 minutes or until crisp tender.

Combine cheese and bread crumbs; sprinkle on zucchini and broil 4 inches from heat 2 minutes or until cheese melts. Yield: 4 servings.
