CREAMY POTATO BAKE 
1 (4 oz.) whipped cream cheese
1 egg, beaten
2 tbsp. minced scallions
1 tbsp. snipped parsley
1 tbsp. butter
Paprika
Instant mashed potatoes (prepare as label directs - OMIT the BUTTER!!)

Baking time: 30 minutes at 400 degrees. Prepare potatoes. Add cream cheese. Beat well, stir in egg, scallion and parsley. Place in 1 1/2 quart dish. Dot with butter, sprinkle paprika. Enjoy!! Serves approximately 6.
